We stone-mill certified organic whole grains in small batches for families in Ave Maria. The whole kernel, nothing removed, milled only after you order and dated on every bag.

Why fresh-milled
A wheat kernel has three parts. Most store flour keeps only one of them so it can sit on a shelf for months. We stone-mill the entire kernel only after you order, so nothing is removed and nothing goes stale.

That's everything except vitamins C, D, B12 and iodine. It is also a strong source of 13 key vitamins and minerals, giving you at least 10% of the daily value of each, plus fiber and protein. Here is what about 100 grams (a little under one cup) of whole wheat flour provides:

Whole wheat flour has about four times the fiber of white flour, which keeps you full longer and supports healthy digestion.
The bran and germ hold most of the grain's magnesium, zinc, vitamin E and B vitamins. "Enriched" flour adds back only a few of them.
The germ's oils are at their best right after milling. Store flour is often milled months before you buy it. Ours is milled to order.
No bleach, no preservatives, no additives. The only ingredient in our flour is organic grain.
Fresh-milled flour tastes nutty and slightly sweet. Bread, cookies and pancakes taste richer and more satisfying.

As soon as your flour is milled, we bag it and keep it in our refrigerator until delivery. Cold slows the natural breakdown of the oils and nutrients in fresh flour, so it reaches you as fresh as possible. Keep it in your fridge or freezer at home too.

Chemical bleaching
"Bleached" flour is whitened with agents like benzoyl peroxide or chlorine. Both are allowed in the U.S. and not allowed in the European Union.
Potassium bromate
Some store bread flours are "bromated." Potassium bromate is banned in food in the EU, Canada, Brazil, China and India, and California's ban begins in 2027. It's still legal in most of the U.S.
Synthetic enrichment
After the bran and germ are removed, 5 nutrients are added back in synthetic form: iron, thiamin, riboflavin, niacin and folic acid. The others stay gone.
Check your flour bag at home. If it says bleached or bromated, it was treated after milling.

Featured grain
Spelt is a cousin of modern wheat that has been grown for thousands of years and is named in Scripture (Exodus 9:32, Ezekiel 4:9). Each kernel grows inside a tough outer hull that protects it in the field.
Spelt contains gluten and is not safe for people with celiac disease.

Our story
Manna Milling began in our own kitchen, grinding grain for the bread we feed our family. We wanted flour the way it used to be: whole, fresh and simple.
Now we mill to order for our neighbors, using organic grain and a stone mill, and we deliver it by hand.
